Quinoa Salad


- 1 cup quinoa

- 2 cups water

- 1 red bell pepper, diced

- 1 yellow bell pepper, diced

- 1/2 cup cherry tomatoes, halved

- 1/2 cup cucumber, diced

- 1/4 cup red onion, diced

- 1/4 cup fresh parsley, chopped

- 1/4 cup fresh mint, chopped

- 1/4 cup extra-virgin olive oil

- 2 tablespoons fresh lemon juice

- 1 garlic clove, minced

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper



1. Rinse quinoa in a fine mesh strainer and drain well.

2. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes or until the water is absorbed and the quinoa is tender.

3. Remove from heat and let cool.

4. Combine the cooled quinoa, red and yellow bell peppers, cherry tomatoes, cucumber, red onion, parsley, and mint in a large mixing bowl.

5. Whisk olive oil, lemon juice, garlic, salt, and black pepper in a small mixing bowl.

6. Pour the dressing over the salad and toss to combine.

7. Serve immediately or chill in the refrigerator until ready to serve.
