Grilled Chicken with Vegetables

Ingredients:

- 4 boneless, skinless chicken breasts

- 1 large red bell pepper, sliced into strips

- 1 large yellow bell pepper, sliced into strips

- 1 large zucchini, sliced into rounds

- 1 large yellow squash, sliced into rounds

- 2 tbsp olive oil

- 1 tsp dried Italian seasoning

- Salt and pepper, to taste

 

Directions:

1. Preheat the grill to medium-high heat.

2. In a large bowl, toss the chicken breasts, red and yellow bell peppers, zucchini, and yellow squash with olive oil, Italian seasoning, salt, and pepper.

3. Grill the chicken for 6-8 minutes per side or until the internal temperature reaches 165°F (74°C).

4. Grill the vegetables for 3-4 minutes per side or until tender and lightly charred.

5. Serve the grilled chicken and vegetables hot, garnished with fresh herbs if desired.
