Quinoa and Black Bean Salad
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 1 can black beans, rinsed and drained
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 avocado, chopped
- 1 lime, juiced
- 2 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
Directions:
1. bring quinoa and water to a boil in a medium saucepan. Reduce heat and simmer for 15-20 minutes until fully cooked and absorbed all water.
2. Combine cooked quinoa, black beans, red bell pepper, and red onion in a large bowl.
3. Whisk together lime juice, olive oil, cumin, and chili powder in a small bowl.
4. Pour dressing over the quinoa mixture and toss to combine.
5. Add chopped avocado and salt and pepper to taste.
6. Serve as a complete meal or as a side dish.
